blue swimmer crab two ways. Crab croquette + crab, apple wasabi spiked slaw

followed by

eye fillet cooked to chefs’ recommendations

with butter poached prawns + asparagus, potato and béarnaise sauce

or

roast pumpkin with beetroot relish, pine nuts, asparagus, goats curd and honey dijon mustard sauce

and

jaffa sphere with chocolate mousse, mandarin jelly and broulee cream
